HOT SAUCE / Cinnamon Vanilla BBQ : Chiloreo / Heat Level 6/10
In our mission to create the ultimate BBQ sauce, we went all the way back to scratch and started from scratch. Instead of tomatoes, we use onion as a base. Fried until you can see through it, then blended with honey, treacle and vanilla to create a richly layered sweetness. Dark sherry vinegar, fresh lemon juice, soy and Worcestershire sauce balance the sweetness with sourness and umami. Three different peppers bring the heat, and cinnamon adds the finishing touch.
